This is a Rock / Paper / Scissors game. I've found that the easiest way to win is to keep throwing Paper. By the same rule throwing Scissors all the time is the easiest way to lose. You have to beat her five times to get the end game scene.

Good guide but I would recommend doing the 5th and last "Supervise the Servants" (the pool scene) plot AFTER all the Ramona side quests, otherwise you need to do the whole thing again (Servants and Ramona) to get a certain achievement.
