All European Civilisations can revolt from their original country, unlike in the non definitive edition where you were more or less forced into a all in, they are now more interesting and fun to do.

Updated with Italians and Maltese, Mexico is in a more fitting place

Mexico's main unique feature is revolution, as it allows you access to new cards and cards you might not have had enough room to put in your deck. However revolutions arn't that simple after ageing up to age 2 you can revolt, then returning back to mexico will get you put you in age 3 so when you revolt the 2nd time no more revolting or going back to mexico. However if you age to age 3 normally you have 2 revolution options you could get to if you revolted sooner and only 1 of them allows you to revolt again. So you have essentially 2 paths:

Age 2 - revolt - return - revolt

Age 3 - revolt - return (if you went Rio Grande)/ Revolt (if you went Yucatan)

I'd say Peru is at a disadvantage here as Columbia pretty much gets their Revolt bonus in a card, but giving your revolutionaries grenades is very nice! Both Simon Bolivar's give the +5% hit points aura.

Yeah, Hadjuks, Crabats, and Pandours are all now their own units. Notably, Crabats are outlaw units as opposed to mercenary units like the Stradiots were. Pandours are still mercenary units, but can use stealth.

Ok, new factions are in, and finally got around to updating Romania and Hungry, there was a bit more then what @Laughing Dog made mention of.

Now while going through that most of these units now have their own models etc instead of being renamed other units, so i'm not sure if the unit bonus' still stand e.g. Pandours used to be Jeagers with +10% speed

Regarding the Romania Revolt's Wallachian Horse Archers card, it also enables them to be trained at the Blockhouse/Outpost. The Hadjuks, 5 Crabats, and 7 Pandours cards for both Hungary and Romania enable them to be trained from Outposts/Blockhouses, Forts, Taverns, and Galleons.
