Dodging
Ok, when a Tank start pulling the rock, the first thing you wanna do is go backwards and strafe left or right, depending on what better direction you think it's safer to go. So you're basically side-stepping-backwards(i guess). When you have a good distance and the Tank has thrown the rock at you, simple change your strafe direction, so if you're holding S+D, as soon as he throws it or a little bit after that, you change to S+A key and if you're holding S+A, you change it to S+D key.
You don't always have to go backwards while strafing, just make sure you change your strafe key to the opposite direction after he throws a rock right out of the dirt, sand, or a fence...Don't forget about the distance.

In the introduction i said that this is not always possible, and it's not. If you're really close to the Tank and he start preparing the rock, while a lot of zombies and ♥♥♥♥ everywhere are trying to kill you, you don't have enough time to get away from it, so consider yourself screwed while a big piece of concrete is flying to hit your face...
An alternate way...
You can destroy them with guns, if you didn't know. You can't do that with every weapon, though. For example, the Tier 1 weapons are basically impossible to do so, while the Tier 2 weapons are powerful enough to destroy the rocks while they're in mid-air. The distance is important, as always.

A good example of a weapon to destroy them is the Grenade Launcher. You won't be using the GL a lot to do this, but you can use it just for fun. Like you would expect, 1 shot is enough, if you don't miss, of course.
The GL is useful if there is a Tank near you pulling the rock and you don't have enough time to dodge it, so you can just shoot it and then you're safe to run.
A tip to use this weapon correctly in this situation is to stay still(assuming there's nothing around you)and wait for the Tank to throw it and then shoot it. Remember that you can't simply aim at the rock because you are not using a hit-scan weapon, the shot depends on the distance, where to aim and when to shoot. So this means that sometimes you will have to aim a little bit high or low and shoot before or after the rock is in the air.
Tank AI
If the Tank is far away from you and his "Rock meter" is full, he will throw the rock. If he's at close range, he will try to hit you with with his Hulk arms, no matter what, even if his "Rock meter" is full or not.
After the Tank throws the rock, he will change to the target that it's closer to him, so if he throws one at Ellis and Nick is closer shooting or meeling him, he will go after Nick.
So would you rather risk yourself getting hit keeping close to the tank or have a safe distance shooting him while having the dodging advantange?

Just a comment: Gnome Chompski CAN sometimes break a Tank's rock, though it is hard to pull off.
