Decades later it turns out you dont even need them to be S-Class! I still race the bastard things though because its a good laugh.
However, it's roughly a 50/50 shot of getting the Good Chocobo from other ones, so don't do what I did and spend hours releasing every Chocobo just because it wasn't with the two Spencers.
Also, do yourself a favor and get both a male AND female of both Great and Good Chocobos. This will save you a lot of time.
To reiterate what's been said so many times, save before you breed. If you reload the game and you keep getting the same chocobo (color and gender) each time, feed one of the parents one Green to throw off the Random Number Generator (RNG). This worked perfectly for me.
That's 85 total instead of 150, saving you a massive wad of cash.

Oh some other stuff to note:
Apparently greens don't improve the stats of offspring chocobos.
Offpsring stats are based on the MAX stats of their parents, where greens only improve the BASE stats of the chocobo eating them.
Related, offspring chocobo's stats are unaffected by their parents' rank.
Racing only improves the chances you'll get a special chocobo.
Joe, the owner of TEIOH, will always have better stats than you.
