To find a specific challenge, leave the map where the beast was found long enough for a reset (minutes or hours depending on where else you travel to), then back up your character and return to the map. If it hasn't reset, quit, restore the backup, and wait longer. If reset, find the new beast, slay it, and enter its portal. If the challenge map is the one you want, then quit and backup. You can repeatedly play the same one by quitting before using the exit portal. If it's the wrong challenge, then quit, restore, and enter the map again to trigger repopulation.
