More details on how to kill anomalies:

Hovering eyes anomaly:
Shine a flashlight at it to deal damage and make it run away
OR
Shoot it with a gun

Hovering ice anomaly:
Open a window (preferably one as far away from the main door as possible) in a building that's heated. It will be lured in. Once it's in, close the window to rewarm the building to deal damage to it and make it run out.
OR
Shoot it with a gun

Hovering electric anomaly:
Throw down an anomaly trap
OR
Shoot it with a gun

Humanoid alien creature:
Use 1 explorer to immobilize it by shining their flashlight on it, and have another shoot it with a gun.

I try to save all my coffee/energy bars for the later parts of the game, so that I can avoid summoning the more dangerous anomalies in the first place.

Use some gun.
And if that don't work use more gun.

The Humanoid ones dislike light as well as heat. But they don't take damage from both sources. Instead they get slowed down to a crawl. Still they are extremely dangerous, as they don't do a bit of aoe damage like the other anomalies, but instead focus one survivor, making them immobile and draining their life, ultimately disintegrating them, so you can't even get them back up with adrenaline. It's pretty much impossible to dodge them in buildings, so you have to have two survivors, so that at least one of them can shoot that thing.

The Eye doesn't like the light, so you can just shine your flashlight on them to deal damage, but not instantly kill them. But they run away quite far, so you can just book it after that, or when they try to catch up turn around for a moment and force them off again.

The Icy one gets hurt by heat. That's not as straight forward. You can open a window to make the building colder, which will lead it in. After closing the window again the heat goes back up, which hurts and slows it, forcing it screeching out again, but hopefully damaging it enough so it won't live long after that.

The Elecric one is easiest dealt with with those traps. But they are one time use. They are drawn to electricity, so you can occasionally distract them with running generators and run around them. They are quite dangerous when you don't have the traps, as they deal quite some damage around them.

Well for me it makes no sense at all how to kill the Eye and Ice anomalies. The electric one is easy, as you just drag the trap from your inventory when it is near. However, for the other two (I have not encountered the Humanoid one yet) it is not clear at all what actually needs to be done. If generators/heaters are on, it doesn't actually kill them. So... how do I kill them?

I thought it was pretty straightforward in the pictures. What I would write is pretty much the same just in other words. I don't see how it makes any sense. When you play the game, you see the picture like on of the above ones. Then you meet the anomaly and based on what you read in the picture you find its weak point (e.g. hovering eye is weak is sensitive to light, etc.). It would be just repeating stuff. Then the downside would become internationals might get confused and thus more work for a complicated guide, that otherwise is best kept simple. It's all very straightforward, the way I see it.

Thanks for including this, but for a newer player it's still not entirely clear what needs to be done. Do you reckon you could please add step-by-step instructions of what needs to be done for each one? Thanks!
