In short:

After countles hours fishing to create the precious cell-phone, I got fed-up with the chests I had stockpile to open when into hardmode, but still I was missing Sextant and Weather Radio... Internet search made clear that many people were in the same position, and trade between players looked to be the prefered method to get the needed items.

What worked best for me was:
Fully equip my character with all the fishing gear I had after countless fishing -> got a new quest fish -> Before delivering the fish, I exited the game and copy-pasted the save files (all, player and world) to a backup folder -> started the game -> delivered the fish -> didnt like the quest reward -> exit game -> copy-paste-overwrite the save files using my backup -> started the game -> delivered the fish again -> didnt like the new quest reward -> repeat -> succeed on getting the sextant (last item I needed) in around 20 minutes of repeating...

When spreading out this method by replying to people asking for help, I also read that the same thing can be achieved by disabling outosave and alt-F4 exting game after delivering the fish. It sounds to be a faster method, but I can't track down the person originally typing this idea to thank him and mention him in this short guide.

Also, during my initial search, it was clear that there are save-game edditors that seems to be a faster way to add the items in your inventory.

I hope this summary guide will help single-play gamers to avoid the frustration of the low-posibility randomness of the Angler quests rewards considering Sextant, Fisherman's Pocket Guide and Weather Radio.

P.S.: My game crashes frequently and corrupts also the outomatic backup save files. I would had rage-smashed my pc if I hadn't been urged by fellow gamers to frequently exit the game and make more backups of the save game files. I propose you keep 3-4 older backaps, since sometimes I realise the files were corrupted after I had copy-paste them to the backup folder (actually making my last hand-made backup save also usless).

This is excellent advice! Another option is to have several (at least 5) extra characters (I call them lackeys) to turn in more than one quest every day. Bring a piggy bank/safe to store the extra fish since you can only catch one at a time.
