The specimen we fought aren't of a specific sex, so we can assume we fight both female and male specimen, which we can also imply don't have any noticeable sexual dimorphism, other than perhaps overall size.
This means that a female Nergigante's udders look like that, as in either very small, or nonexistent, although there is a possibility that the udders grow in size during pregnancy and during the lactation period, and that we simply never fight Nergigante that are pregnant or lactating.
