If you find a solution for the horrid stretched HUD please post it. I'd love to jump back into Fallout 4 but I refuse to until the HUD renders properly. :(

That looks playable to me. Of course I'm not going down that rabbit hole again unless someone can point out exactly which mods they used. I've tried all of the ones on the Nexus and the resolution works fine but the HUD is stretched so badly that I just couldn't play it. I ended up throwing in the towel and moving onto other games.

Not sure how it will work with your higher resolution though. But i think somone in comments mentioned it should work.
If the first mod doesnt work. Then you could also try this one

I tried it; doesn't work. HUD is stretched across the entire screen and looks awful. In fariness though, the mod author does put in bold red font that the patch only works for 2560x1080 and not 3440x1440 (and that he would not be creating a 3440x1440 version).
--EDIT--
I haven't tried the second one.. gonna try it now. will report back.
--UPDATE--
Nevermind, I did try the 2nd one. It requires the FlawlessWidescreen program be installed and used to launch the game.
Thanks for the suggestion though!
I've properly fixed this in my TruBy9 series of patches, which is the direct successor to both JonDoeBowler's Utra Widscreen Patches and daisuke_niwa's Widescreen fix.
I've hand patched all required user interface elements required for native 21:9 support. Currently, I'm working on fixing a very minor issue with weapon scopes not scaling all the way, but it isn't game breaking by any means (really not that noticeable either, I'm just OCD). The Power Armor HUD and Workshop menu elements have all been fixed.
My mod is also standalone, which does not need Flawless Widescreen (nor does it work with it).

I've also done this for both Skyrim AND Skyrim Special Edition. Links can be found on the description page of the above link. Do enjoy, and inform any others that are having trouble to refer to my patch, that way we can all enjoy this game in its proper aspect
-UPDATE-
Maybe it's because of all the mods I have but the HUD still looks stretched and squared to me. Is this how its suppossed to look with the mod? I can't seem to see anything but this terrible looking HUD when trying to play this in 21x9, particularly that green HP meter.

For an explicit guide to cleansing your INI and getting the best compatibility, please refer to the instructions posted in the description page of TruBy9.
Nope, did that. Removed the ba2 from prefs, uninstalled all the other wide screen mods, and I never installed FlawlessWidescreen.
--UPDATE--
I also did not set the FOV; don't know if that effects anything or not.
