No Gore in Fallout 3
I originally had a mod posted here called "Gore no more" for F3. If you still want that mod, here's the link: http://www.nexusmods.com/fallout3/mods/7318/?

Anyway, I found out how to disable gore for all my queasy friends here. so I entered this into my documents > my games > Fallout 3 > FALLOUT.ini

bDisableAllGore=1

and I don't think there's any gore anymore. I tried the same thing with new vegas and it didn't work however.
