Not sure if it supports more than 4 XBox controllers.
There aren’t many pure co-op games for more than 4 local players so I’ll mention the few I know:

The mod works with max 4 XBox controllers. To go beyond that you need to use other controllers e.g. PS4 or buy a utility called reWASD to turn your XBox controllers into emulated PS4 controllers. Also make sure that SteamInput is disabled for your controllers in the Steam settings or the SteamInput per game settings.
I saw that the developer recommended to enable "XBox Extended Feature Support". This does not help in this case since the game doesn't use the SteamInput API.
With reWASD I was able to get all controllers I had connected to work with PlateUP: 6 XBox360 + 4 XBox Series X/S + 1 PS4 = 11 controllers.
