No, you can't choose any of the "main" characters. In other words:
No Alma/Alice/Tamamo/Erubetie/Granberia/Gnome/Salamander/Undine/Sylph/Ilias

Mine's probably the Nekomata. Either her or the Vampire Loli. I can't really choose, to be quite honest.
With time passing by and changing my tastes along side Part 3 opeing up an obscene amount of monster girls to choose from, my favorites differ now:
