I ended up noticing it was the resolution which was causing issues. I had to set my primary gaming monitor to 1080 as well as turn off hw encoding.
Worked well nut graphics were noticeably bad through steam link. It was the lag in controls which has me thinking of a 10m hdmi or new gaming machine for the lounge Tv.
Moonlight works but Steam Linknseems to crash the decoder.
I tried using Moonlight too and am able to pair my TV with the PC, but it also hangs when I try to connect. Did you change any of the default settings in Sunshine to make it work?
