Stuttering Audio
Games work great when connected! However, the sound is choppy and I'm not sure why.

Ideas on possible fixes?

The easiest fix is to set your audio output in windows settings to 48khz - if your audio device supports this.

I have a bluetooth headset that only supports 44.1khz so I'm stuck with stuttering audio... :(

On the host machine or the client machine?

On the client machine.

I now also fixed it with my 44.1khz only bluetooth headset using 'VB-audio virtual cable' as a workaround.

Go to playback tab of sound properties. Set cable input as default device
go to record tab of sound properties. Right click properties of cable output.
Select 'listen' tab. Enable 'listen to this device' and select your actual sound device as playback device.
Then go to advanced and make sure default format is set the same as your actual playback device supports (44.1khz stereo probably).

What this does is steam can output in 48khz without stuttering. It is resampled by virtual audio cable to 44.1khz without stuttering and then output to your actual device.
