Why are you using Linux for gaming?

You think you know better than Valve's lawyers?
If not, why would they add a severability clause in the first place?

Yeah, probably you do. Think that.

If you're content with believing what companies tell you, well, let that be your way.
Be assured it's not all true, and EULAs often, very often, are not standing juristical review.
And, as said, I'd be even free to break the DRM in my country if Valve would be denying me my rights.
Okay, contact your lawyer and let me know how it goes.
I can assure you you have no idea what you're talking about. The only way to defeat Valve is to discontinue buying games on their platform and buy from their competition instead. If you actually do talk about this to any lawyer prepare to be laughed at. Steam is a platform that allows you to rent games from Valve (not buy), and there is no law, in EU or anywhere else, that can force them to provide service to you for arbitrary reasons.

Funny that people like you or nitehawk always have private profiles, I'm curious how many games you actually have in your Steam library.

I do that because I enjoy seeing control freaks being frustrated at their inability to inspect my profile at their leisure.
