Normal Caestus with str AND and should work well. Vanquisher's Seal and Bonnefist are good fist weapons as well.

It can be viable in power stance with another caestus/(bare hand with champion's covenant ring). Not because of the damage, but because it can stagger most of the bosses regularly, thus helping your host to survive when you are helping someone with the boss as a phantom.
If you are wondering if you can go through the game in your world with them, well it is not the best weapon in this case. The damage is too low to deal with enemies before bosses, and when fighting against bosses it is much more reliable to just kill them as fast as you can and caestus has realy low damage.

Caestus is only viable for strength build/quality build. The damage falls realy hard when you infuse it.

Believe me, caestus and bone fist are quite good for PvP, but definitely not befitting to PvE. Just you are better off using something else, Handmaiden's Ladle?
