If i remember correctly, one-handed is almost always better just because weilding two weapons or a weapon and a shield ends up giving you so much bonuses to all sort things that it's not even comparable as you progress to the game and get to higher levels of difficulty. For DPS, two weapons are the best. It also depends on the character you play. The dwarf is probably the best two-hander, followed by the gladiator. Both of them get access to the big giantish weapons that no one else can use. If you want to go two-handed those are the characters. Alternatively for the vampiress if you focus on the vampire form (as you should) it doesn't matter that much what you wield cause you fight unarmed when transformed and it only counts your weapon raw stats. If i remember correctly one funny way to build vampiress is focusing on bows range weapons for certain properties they have. It doesn't matter you suck with them in knight form since the vampire form is the key. In any case, if you want more specifics check the steam build guides. They explain in actual detail how each type of weapon handles and their advantages. If you are interested i could link you my fav guide i always check to refresh my memory.
