As the video makes clear you can start completely over simply be deleting your save and starting a new game. The video exists solely for people who want to jump back into the game without having to start over entirely. So I'm not sure what your complaint is, here.

My complaint is, that there is no way to "simply" delete ones save and start a new game so that the initial video and the tutorial show up again.

Literally just now reinstalled the game and hit New Game from the main menu and it dropped me right into the opening tutorial. Is that not what you're looking for?
