I do what Mathias Giovanni hints at - have multiple setups.

You're heading into deeper waters as far as modding, and I might have missed it, but a mod manager might help you.

I use a mod manager, Mod Organizer 2, and I maintain 2 profiles: 1 with all mods enabled, 1 with all except SFSE mods enabled. MO2 keeps a copy of all my mods. rather than having them installed into Skyrim directly, and can maintain the save files separately by profile.

I launch MO2, I can then select a profile from the drop-down, and then I can enable/disable mods per-profile. When I launch Starfield from MO2 it then just uses the mods I have enabled.

Right now I have about 300 mods, 6 of them require SFSE.
My main profile has all the mods enabled.
My SFSE-Unavailable profile has 294 mods enabled.

Normally launching Starfield via MO2 prevents Steam from auto-updating the game. Yesterday, I had a brain fart and launched Starfield directly from Steam and it updated. When it was done, I launched MO2, switched to my SFSE-Unavailable profile, and just played the game with another save. Then I just keep an eye on the pages for the SFSE mods (1 has updated already, 1 was compatible as soon as SFSE Address Library updated). When everything's up to date again I just switch profiles and carry on with the old save.

If the game constantly crashes, then yeah, they better have an Auto Save. If I have a voice comm telling me instructions, then it needs to be fully fleshed out. If i'm in a sci-fi future tech factory builder, it best feel like it. This does not.

Items on the ground are outlined, regardless of whether they're in the brush, so I have no issue w/ that.
