Is thief's cheaper cost really necessary? I think just a little spend is enough if you have good reflexes to disarm trap, lockpicking can always be savescummed if you are very unlucky with lockpicks.

About lockpicking. You are right. This is primarily a player choice in whether they want to scum or not. More points you put into lockpicking, easier it is to succeed (less comlplex it will be to pick), but I get the angle, why bother if you can just savescum. I personally find the game more enjoyable living with outcomes, and changing strategies if needed to overcome. Hell, I even like the food system!
