Animal companions do not force anyone off the 6-person roster. You can have 6 people, plus all of their animal companions, in fact. Animals cannot wear gear, and don't get Feats. They also fail Will saves a lot and get scared, turns out psychological warfare is a thing, but all things considered, animal companions are really good. The big cats and dogs are probably the best, the other mammals are still good, the monitor lizard and centipede are the worst. The different animals get different special attacks when they get to like level 6-8. The cats (at leas the smildon) get Pounce, which is a full-round attack (so four claws and a bite) at the business end of a Charge action. The dogs get a free Trip attempt when their bite attack hits, which is helpful because monsters cannot try to attack while prone (neither can anyone else). The reason I don't like the lizard and centipede is that their special attacks are both poison-based, and SOOO many things in this game ignore poison. Spells that buff the whole party, like Haste, hit animal companions and summoned pets as well, so that's another reason to like them. There's also a Feat that undoes the nerf that the "late and not as good" animal companion that the Ranger gets normally has. It's called Boon Companion. I would take that on the Cleric at level 5, because they get the Ranger-style pet at level 4.

One other choice I would think about for that cleric is whether or not you want to use a lot of Summon spells. The ones that summon undead are pretty good, because undead are immune to a lot of stuff like poison, fear, etc. There are three Feats that make Summoning better, the two you want are Augment Summoning and Superior Summoning. You have to have Augment Summoning in order to take Superior Summoning, and they both make your summoned stuff stronger. Sadly, there's a hard feat-tax prerequisite to take Augment, which is that you have to have Spell Focus Conjuration first. Spell Focus Conjuration does very close to absolutely nothing all by itself, but it unlocks those other two feats in a chain. You have to get Spell Focus Conjuration, then Augment Summoning, then Superior Summoning, in that order, due to the pre-reqs. That said, clerics get all of the summon spells for free without having to spend any slots or learn them at all. Well, they don't get Summon Nature's Ally, that's a Druid spell, but they get pretty much everything else.

As for the cleric in general, try to remember that they're not as good in melee as actual melee classes like the Rogue and Barbarian, etc. They're also not as good at slinging ranged damage as a Wizard or Archery Ranger would be. So your own cleric character, if they're built for melee, has to be a good team player, set up flanking with the other melee guys, and cast buffs, chip in some damage to finish the monster off, or set up the melee guys to do that on their turns, etc. If you're more of a ranged type, don't try to be the main damage output guy, because cleric spells that deal damage are very nerfy compared the wizards spells of the same level.
