I only failed once cause I got cocky. Just toss a bottle at a reasonable distance, then slowly sneak up to him. You can also throw bottles at him to stun so you can find a new spot to hide. Rinse and repeat, so rush and don't try and get ahead of yourself and stealth attack him without throwing a bottle

You know you can go to sleep at any time, right? You don’t need to wait for nighttime specifically.

With the fast travel element, there’s no reason it should take any longer than 15 seconds to get from wherever you are to bed (the “save point”). Because there aren’t any seasons or time-sensitive quests, there’s no consequences for going to bed early and progressing a day in order to save.

Obviously it’s not ideal compared to just having a save option in the menu, but it’s something.

Deep mines are a last resort when all normal mines are depleted... and imho even then it might be more efficient to just buy those materials from the traders that come in every year. Deep mines are really not worth the workforce you put to work there imho.

see that's my opinion too I can't do it statistically cause I don't have the tools available right now but I just don't think that all those people doing one job when they could be doing something else more efficiently.
