Nioh 2, Kenshi and Factorio from that list are significantly less grindy than Elite.

Minions are busted and insanely op if you really dig into it

UE5 is an easy-to-master engine; it's an all-in-one kit for producing small games on a mass scale, by purchasing assets, with minimal code. With minimal knowledge, but extremely demanding.
