Report a translation problem
For games to be considered outstanding they have to be continuously raising the bar,
To the point where games that might have seemed average seem terrible.
I understand that this is no excuse to make poor quality games,
But I'm offering another viewpoint on the subject matter.
Then look harder. There have been a lot of great games released since Skyrim.
"We all know Skyrim was an exceptional game... good innovation at its core."
Skyrim wasn't particularly innovative. It was an improvement (in many areas, at least; dungeon design, some quest designs, and dialogue options left something to be desired.) on an existing formula.
"All we have seen for the last 2 years are just remakes and ripoffs."
Video games have always been like this since the beginning. Someone hits gold with a great formula, everyone else tries to copy them. Look at how many platformers were on the NES.
" I see it everywhere, not just in games but in the community, game modifications are becoming pathetic, I remember when I would go to the Skyrim/Fallout nexus to see amazing mods to hit the hot files and be excited to play them, now when I look they are pathetic and boring."
Look harder. Maybe they aren't in the Hot Files. There's still a lot of good mods around for a lot of different games.
"Remember when fallout 3 came out, bioshock, far cry 2- if you look through any steam library these games will go down in history and were games that summarized the pinnacle of Escapism and Innovation."
Fallout 3 is like Oblivion with guns in the post apocolypse.
BioShock takes a lot from System Shock 2.
Never played Far Cry - can't comment on it.

While 4 was basically more 3 from what I've seen, do you expect a sequel to deviate a whole lot? Sequels should add and improve, I agree, but I don't think we should expect entirely different games.

That's because it was hyped to the point of being thought of as the savior of gaming. There's a cycle in the gaming industry where gamers (not usually the developers, mind you) generate an infinite amount of hype for an upcoming game and then are disappointed when the game comes out and is not the greatest game that will ever be made.
"Halo series- well see about halo 5 but everyone knows halo 4 was a bit unbaked.
Assasins creed- Best innovation and new gameplay mechanics goes to IV, everyone knows it. That is the kind of game that can go a long ways - INNOVATION."
Haven't played or really ever seen either series; can't comment. Still, innovation for innovation's sake often ends poorly - look at the Wii U. If it ain't broke, don't fix it. In the case of AC, most people with whom I have spoken have said that AC was broken, so it did need fixing.

I've heard AW actually was pretty good in the multiplayer.
"Battlefield- now starting to repeat itself and come out with poor quality content. Battlefield 4 is unfinished and a frustration to play. Hardline looks dissapointing and is yet again a small change from the BF4 engine."
Never got into BF; can't comment.
There's already a lot of incredible games, you just have to look for them. Also, as much as GT is often hated around here, this video sums up the problem:
