The game remains in your library, ready to install again at any time you wish.
For "Free to Play" titles you also get the option "remove from account", that will remove the free license from your account and the game will no longer be in your library.
You will need to visit the store page again and add the game from there if you want it back.
There is also the option on the Support page to select any paid game you own and then choose " i want to permanently remove this game from my account".
If you do that the license will be deactivated and the game removed from your library, it will no longer show up on your profiles "Games" list too.
BUT, at any point you want the game back you can just go through the same process on the Support page and select " its not in my library", that will give you the option to restore the previously removed game and it will be back in your library.
So its more of a advanced "hiding" feature then a real removal.
I don't know what reason there could be to really remove a game from an account, the "advanced hiding" usually is enough. I know support can do it but personally i wouldn't go that far. There was once a reason to get that game, especially when it was bought for real money.
