Over 2 billion levels (that's a "B") and you can continuously improve your character as you go.
Sure it's not "infinite", but we do have to give some consideration to the poor hardware!
You can be killed but it's not that big a deal. All your gold will drop where you died, you just have find your way back there and not run into whatever killed you.
In online games I think there is Black Desert Online and Diablo 3 (4?) with infinite levels but I missed the trains too.
FATE seem interesting

Nioh 2 don't have an infinite progression, it's more like dark souls
Hades have an endless mode? I already checked and it look like we are limited in our character progression, rooms are not endless

Rune factory as a series also has a deceptively complex item crafting system. It's a min/maxers paradise.
All valid styles of play.
Diablo 2+3 are both quite extensive in how far you'll take a singular character but that's Blizzard..so Path of exile is a great Alternative. Then there's the obvious games, Morrowind, Oblivion, Skyrim. Technically Dark souls as well, but the only gratification you'll get from a dark souls(like) game is setting challenges for yourself. I'll also mention Old school Runescape as well just because you'll probably never max an account, ever unless you have little to no life like me.
