And the holy trinity of Columns and Tetris and Puyo Puyo. They do require a real gamer's motor skills and years of practice to get good at, but are certainly good for brain exercise.

If you want a matching game without time constraints, I would say Huniepop or Tabletop Simulator. You're never too old to try getting into ancient games like Go and Shogi and Xianqi and Fidchell and Reversi and Hex and Mahjongg.
