If you like driving; Mercedes-Benz World Racing, Forza Horizon 4, American Truck Simulator, NASCAR Heat 4&5, Project Cars & Project Cars 2, DR2.0 are huge candidates. (i still play MBWR since 2004)
If you like isometric Hack&slash; Diablo II: LoD, DiabloII Resurrected, Grim Dawn, Titan Quest (THQ still release really good expansion packs. Incredible for a 2006 game and proves its infinite replay value by doing so) are proven ones.
There are others too, but it depends on personal taste. I mean, i still play the 1997 game Hexen II but, that's just me.
But i can't really state what game would have a deep long lasting replay value because that is something based more on opinion. I have tons of games I keep permanently installed that i sink large amounts of time in but those same games may not hold your attention as long. Hell you may not even like the genre or the game play, so i can't really say for sure.
I mainly just wanted to say some games can last forever if you like the game play enough.
Most Open World/Sanbox/Rogue Like game would probably fit your needs
