Sounds like you want something like tower defense, but you want more of a first-person experience. (At least that's my guess. You didn't give me much to go on.) I only know of one game like that.

Haven't played it, personally.
For a slower pace, you might try the Batman Arkham games. The boss battles are tricky, but the goons are endless. Fodder enemies show up wherever you go.

Far Cry 5 is a great game if you just want to feel invincible. (Without actually being invincible.)
It's a lot like GTA, but it takes place entirely in rural areas. There's cars, boats, planes, and other vehicles. (Like "quads".) If you can see it? You can probably drive it.
90% of the game is driving around the countryside killing redneck cultists. They constantly come after you, and you're constantly looking to kill them. It's a murder-fest.
The game makes you feel as if you are the star of an old action movie. You're the hero. Kill the bad guys. That said... the story does make you want to question all the killing you are doing.
It somehow feels both goofy and serious at the same time. Like when you lose all your health from getting shot too much. And then you get back up when the dog companion licks your wounds.
The only thing you might not like is that you get screwed by cutscenes. I'm only about 33% through the game. Several times cutscenes took away my weapons, or placed me into difficult situations.
