Also, I think it's worth mentioning two upcoming titles:

Monster Sanctuary: Looks tempting, might look into it more. Hows post game? Is it one of those games that goes forever?
Temtem: I'd be definitely onto that, but MMO's just genuinely scare me a little. A part of me fears one day the servers will go down and I will lose everything. Stupid reason I know, but I'm like that. Plus I am a bit introverted even when it comes to games haha
Digimon Story: Cyber Sleuth: See I actually own this game, but never gave it a good go. Does it have a good post game? You think it's worth giving a good go? How'd you feel once you complete it (if you did)
Cassette Beasts: Looks alright, a little strange, might give it a go if it pops up again when released.
Palworld: I kind of hate you now for showing me this(joking) this game looks perfect, but it's not out yet haha. If only it was out, that would have been a winner lol (WISH LISTED)

The mmo part of tem tem is pretty ignorable.

It doesn't really effect the game play very much. I played it for a bit with the wife.
No real post game to speak of, only a handful of secrets, but i don't wanna spoil too much. It has harder "New Game Plus", where you can start over with all of your monsters and equipment. Combat's interesting, because you can create some really nice synergies with your teams.
The game has a battle-rating system, which ranks you higher the more efficient your strategy is (high rankings give more loot), so you can try some of the battle-challenges.
There's a NPC, which lets you re-fight bosses as much as you want. You can try to 5 star them all, for some nice rewards (or even 6 star, but that's just for bragging rights).
Tem Tem:
A Pokémon clone to a fault. Combat's way more interesting and refined, than Pokémon and actually provides a challenge. It's still far from finished, though. It's always online for no reason other than to be always online, with MMO-esque features shoehorned in. It's poised to be infested with microtransactions.
Digimon Stories: Cyber Sleuth:
Again, no real post-game. Some optional Final Fantasy Omega-weapon style missions at the end, where you have to make a perfect team and min/max hard, which can provide hours of time-killing. But it doesn't really need a post-game, because it's actually 2 games in 1 with both being ~40 hours long each.
In fact, the only Pokémon games with a notable post-game, that i can think of were gen 2 and maybe gen 5.
Some other creature-collector's, that might be worth a look:
"Monster Crown" (also not finished, but at the final stretch), "Siralim 3" and both "Ni No Kuni" games. If you like Final Fantasy games, check out "World of Final Fantasy". Haven't played them yet, so i can't comment on those.
If there is one thing the Monster Hunter series is known for, then it is endgame content. According to the current roadmap, Stories 2 will be no different.
Game has a demo, so you can simply try it. If you like it, you can even transfer the savegame into the full game.

I've never played it though.
I also remember running across a "Pokémon clone" indie game on PC that's not TemTem, but I don't remember the name. I do remember that it can involve creature death though.
I can't seem to figure out the name of the game I'm thinking of, though...
