how to I change the online/matchmaking server to East US?
I'm stuck with player's speaking (what I think is) Spanish and the ping goes up like crazy
I can't find anything on the client-side or in-game to change my region, and it drives me crazy people speaking gibberish on the global chat! help?!

That's wholly dependent on the game and what it supports. Try asking in their specific hubs.

it's not a game specific! it's every game like those two (just examples) I keep being pair with these trange langague speakers! it's on Steam itself it seems....

that's odd, I'm nowhere near... whereever they speak that language... is there a way to overwride this?

Steam doesn't handle individual game servers. It would be each game individually.

Most matchmaking systems bundle users automatically to their best latency group.

but why am I paired with mexicans, then?! I just don't get it!! do I need to talk with my ISP about this? that doesn't make any sense!! I'm from Florida for crying out loud! I'm getting terrible ping with this!!

EDIT: over 250 ms

Maybe you are using vpn
i'm not actually, not even custom DNS... maybe I should... will that change the latency too much?
