Let's see...

* the old classic roguelikes generally aren't on Steam. There might be an implementation of Nethack on Steam, using one of the Vulture's [whatever] packages for graphics. But I'd strongly suggest playing it on the alt.org server because there's an existing playerbase/community there. The other games I'm not sure about but I think they similarly have servers like these.

* There's a variety of indie games that have never made it onto Steam. These range from the obscure and probably not notable (e.g. Seraph, a flash game) to older but pretty well-regarded indie games (e.g. Iji, 5 Days a Stranger, Warning Forever) to the notable but possibly tied up with publisher complications (e.g. Flying Red Barrel). A lot of games of this sort that are recent, are on itch.io, and possibly waiting for a Steam release. I pick these up occasionally (I just bought Immersive Paintings a couple weeks ago, and Space Child about a month or two ago). If you wanna sort through these, you will basically need to ask around to find out what's good and suits your tastes.

* a handful of famous older PC games aren't on Steam. Some of these are on GOG, such as the Neverwinter Nights games.

* actually, older games in general. Haven't seen stuff like The Castle of Dr. Brain on Steam.

You tried anything from Blizzard? World of Warcraft, Starcraft 2, Diablo 3, Warcraft 3, Overwatch, Hearthstone? Really cant go wrong with any of those with the exception of Diablo 3 Blizzard is well known for producing some of the best games on the planet... although there are better alternatives to Diablo elsewhere. Havent tried Overwatch yet. I hear its good though.

Ever checked out gog.com? Tons of great games all 100% DRM free. They also have almost all of the great classics like Dungeon Keeper, Theme Hospital, Populous, Planescape Torment, etc as well as lots of big IP new games.

Then there is Origin.. where you can get all the EA games which are not released on Steam anymore.

What is DRM free?
DRM = "digital rights management", basically something that restricts the way people can play a game, in order to try to help prevent piracy.

In the old days, these were things like requiring CD keys, or requiring the CD be in the drive, or asking players to find a certain word somewhere in the manual.

In recent years, some more restrictive forms of DRM include requiring that the player have a constant internet connection, or have the game "phone home" every time it runs to verify that the person able to play it is authorized to do so.

The Steam client program is a form of DRM, in that many games require the Steam client to be running (and logged in with the correct account) for the game to be able to start. (Some games do not require this, despite being sold on Steam.)

Steam is generally relatively as a relatively light DRM, as it has an offline mode, and also combines the DRM service with a number of generally-desirable social features. Some publishers combine Steam DRM with other forms of DRM, such as Denuvo (which I think is an anti-tamper DRM).

GOG, on the other hand, prides itself on selling all games DRM-free. Once you have an installer, or once you get your game downloaded and installed through its optional Galaxy client, you can take your computer to the middle of the Sahara and the game will run just fine. You can back up your installer on any medium, and if you put the installer on a computer and stick it in a vault for 100 years, it'll still work then, even if GOG no longer exists.

This in turn means that publishers who are wary of piracy may avoid selling their games on GOG. This is one of the two main constraints on GOG's catalogue, the other being their apparent insistence on curating it very strictly.
