I know you're probably tired of GTA after GTA V, but hat's because that game freaking sucks by comparisson. San Andreas was the last good GTA.

Welp, my personal favorite was always Legend of Zelda: Twilight Princess. Yes, over Ocarina of Time; I liked the ambiance and setting of TP far better.
On Steam? Probably the Mass Effect series, and yes, that includes 3. I hadn't really had much experience with choice-and-consequences yet, and ME blew me away in comparison to any 'choice' games I'd played before. Sure, no game's perfect, but hell, I don't think there's any game out there that can marry 3 titles together in a trilogy like Mass Effect. So the ending is mediocre - but the 120 hours leading up to it contained some of the most memorable moments I've had in gaming, barring a few other titles which I'm sure everyone is tired of hearing about.
If you want something more casual though, go for Borderlands 2. The first was imperfect, the third was sort of whatever, but the second was spot on. It was funny, it was chaotic, and it had just enough RPG mixed into the FPS to be really ♥♥♥♥♥♥♥♥ fun.
My personal favourites are ArmA 3 (modded to the teeth and unmodded), TES: Skyrim, and Starbound. The Resident Evil series are also fun, my favourite is 4, and 6 is nice for COOP, quite a lengthy game! Fallen Earth is a fun F2P, and APB is alright (not very good, never updated and toxic community) but it's fun with friends or if you avoid the community. Insurgency and the Sniper Elite NZA series are also something fun on your own or with friends :), Metro 2033 is a thrill on Singleplayer aswell!
Though, my favourite favourite is ArmA 3.
