Now those are the main steam files, there is also the "my documents \ app data folder that a lot of .ini files are found. ".ini" is often the type of file you would be using to edit values in the game,
Imporatnt to remember that you should make a backup save of the file itself just incase you do something wrong and it wont boot right, you can just put the old .ini file back to restore defults.
I am not 100% sure that it is allowed to edit steam files, but if its not online im sure its not too much of a problem.
There is also a "my games" folder in documents that might contain it, im not 100% i just know from the past what ive had to do to edit ".ini" files
But stardew doesn't have a save folder in that location but I found it in the %appdata% rout.
I didn't know this worked because with minecraft editing that route doesn't edit the .minecraft folder found in twitch launcher so I didn't think it would work via the steam launcher but it was located there.

Definitely ALWAYS make a backup of the original file you edit.
