Moving to 64 bit
Hi - I've noticed that Steam and my games have been installed as 32 bit versions. Is there any way I can change this to 64 bit versions to get the most from my shiny new i9 processor?

Steam on Windows is a 32-bit program. There is no 64-bit version.

As for games, same thing except you can bug the game devs for a 64-bit version. Usually doesn't work but some games are getting the remastered treatment.

That literally does nothing to make them 64-bit.

The game I'm thinking of is Sniper Ghost Warrior Contracts, which is a recent game so it'll be available in 64 bit. However, it's been installed as 32 bit on my machine.

I guess my underlying question is, can, when you're installing a game through Steam, tell it to install the 64 bit version?

The 2 Ghost Warrior Contracts games, 1 and 2 are both 64-bit.
