Will I receive any physical mail after redeeming a steam gift card code from Empik, in Poland?
Hello,
I have received a Steam gift card, which my friend told me they bought in a shop called Empik in Poland. I want to redeem it, but it asks me for my address among other things "for the purpose of collecting sales tax". Will I receive any physical mail if I redeem the gift card and use it to purchase a game on Steam?

From Valve, no. The physical address is just for what was stated, tax purposes.

After performing what actions (apart from redeeming the card and using funds on my account, which we have settled - does not result in any mail), would I possibly receive mail from Steam?
Would mail come when, e.g. I bought a product on Steam paying from my bank account?

You don't get any physical mail from Valve/Steam.

You get an email when you purchase a product from the Steam store.

so why do they need my physical address and zip-code and so on? I understand needing the country but why do they need the physical address, if they won't send me anything? Is this only a fomality (keep in mind, I'm from Poland, I don't know if that changes anything)

To ensure you are only paying your country's VAT/taxes with store purchases and not another country's VAC/taxes.

Physical billing address is the only way they can do this.
