I would personally advice some fully paid games without a monthly subscription system or payment barriers.
(Similar with some games you mention like mario and stuff)
https://store.steampowered.com/app/360830/
(A galaxy exploration game. It's been better by now compared to it's initial release. But be warned, it's a bit grindy at times but you can always use some cheat to help you along the way even tho i don't recommend it)
https://store.steampowered.com/app/275850/
(Party game)
https://store.steampowered.com/app/386940/
(Minecraft, but 2d and there's a lot more content in this game)
https://store.steampowered.com/app/105600/
games i would recomend :
Freedom Planet , Giana Sisters Twisted dreams , Sonic Forces , Sonic Generations , sonic lost worlds , Undertale , Portal 1 & 2 , Burnout paradise , phantombreaker battlegrounds , crash bandicoot , sonic all star racing , a hat in time , yooka laylee , rayman 3
and now some other games which might not quite be for a 7 year old but i still recommend them
Naruto Ultimate Ninja storm 1- 4 ( plus revolution ), its a really fun fighting game , based on the naruto anime , maybe not ideal because you need to react fast and the story can be confusing
https://www.youtube.com/watch?v=ZZpjCGTFHxg
video of the final boss of the 4th game
super meat boy , a really challenging platformer but the theme might not really be for a child , in meat boy you control a small meat cube that has to get through levels filled with saws and if you hit them its a bit gorey but not too bad , theres also a sequel called the end is nigh
Final Fantasy
a franchise that currently has around 18-20 games , with all being RPG , JRPG and Action RPG
all main games in the series have completely seperated universes , only 10 & 10-2 , 13 , 13-2 and 13-3 ( lightning returns final fantasy 13) as well as Type 0 HD share some of the things like the same world or same terminology ( the 13 trilogy as well as Type 0 HD are part of the fabula nova crystallis quadrology , and for 10 and 10-2 , the later plays 2 years after the first and expects you to know what happens in the first game)
most games of the franchise usually are rated T ( but dont really are violent or anything )
all the games have their own universe and characters , you can start with any of the games , i personally would recommend the 10th entry , however if you think your son isnt quite ready to play a T rated game , wait a bit longer , i still completely recommend the games , they are really great

heres a video of a fight in the 10th game , most other final fantasy arent really much different gameplay wise
https://www.youtube.com/watch?v=wG440B3-7OU
and heres a cutscene from the 13th game
EDIT:
https://www.youtube.com/watch?v=OCWoWC6wahM
and heres a scene from the 3rd 13 game , showing one of the more tragic scenes , its not violent but maybe hard to understand for a child
however i dont really know if your son is old enough to play them , i played 10 when i was around 10-11 years old and it was fine
i also think i should recommend the Ys series, i heard its similar to the legend of zelda and also T rated ( havent played it much yet tho )
and lastly i got some other games i can really recomend but i doubt they are really for a children , those games would be the batman arkham games , assassins creed and skyrim , they arent tool violent or too graphic with sexuality
but they arent completely child friendly games either , but they should be fine if you played it with him , or maybe once hes a bit older , the batman games are heavily focused on fighting it
if i can think of some other games later i could recommend them too
Progression may require patience but I remember not being too upset having to play things over and over at age 7.

Sandbox game about space engineering. Laid back and educational.

The Lego games on Steam should be great fun to play together as a family as well.
Check a list here: https://store.steampowered.com/search/?term=lego+
Example:

Some of the Disney games should be suitable as well, like this one.

Here's the list of theirs on Steam: https://store.steampowered.com/search/?publisher=Disney%20Interactive
Racing, easy to have fun just zooming around without much demand unless you want to play that way

Great as coop or alone. It's cute, creative and colourful. Platformer. May be hard to reach end for youngsters.
https://store.steampowered.com/app/238460/BattleBlock_Theater
Same dev as above, action variant, better as coop. Just a fun button smasher really. Cute graphics. May be hard to progress for youngsters.

Most likely you know already but Splatoon 1/2 are great on Switch as you can shield your child from communication with strangers whilst giving them a multiplayer/interactive gaming experience.
DST has cute art but has monsters and a night monster called Charlie that could potentially upset children. I am recommending it because it provides a sandbox mode. Get rid of nighttime, monsters, make survival very easy and it's a fantastic way to get used to resource gathering and building. It can be fun picking trees, trapping animals and just having laid back fun. Later on you can add things that your child would be interested in trying out. The daytime monsters aren't traditionally scary, but they can kill your character (even then there are soft revival modes). I've known people to play this with even younger children in sandbox mode. I do NOT suggest online MP, just play with family/friends.

Very cute, farming game based on exploration. I doubt it'll be an issue but it has one slime character called The Tarr that is darkly coloured and can be a threat so this check videos to see if this is suitable for your child.

I hope this helps a little.
Edit (Race the sun and Mini Ninjas below too. And Worms Clan wars and other Team17 games and such.)

Gamepad recommended.
