Your isp can track all incoming/outgoing connections if you don't hide the traffic. Use cloudflare's https://1.1.1.1 dns.

Changing your DNS settings does nothing to hide anything from your ISP. You're just finding a different place to locate actual web IP addresses.

The traffic still goes through your ISP and they can see where you are going.

It doesn't matter. It covers your tracking data that's all. There are known apps that can send data to the ISP and let them know you are actually visiting this site instead of the actual site you are visiting for privacy purposes.
