Download Wineskin Winery (google it), and have a look at their website, it has documentation that explains it better than me. Make sure you up date the 'engine' to the latest version, create a wrapper, then once it's finished close wineskine winery and locate your wrapper in finder (probably in your home directory application folder) and right click on it. Select 'show packae contents' and it will show you the files inside, one of which is an app called 'wineskin' which is the config app for your wrapper. Pick install software and ten you have some options depending on how you install oblivion (I can't remember precisly how i did it).
1) If the game has an installer pick the first option, which will ask you to locate the installer exe file.
or
2) If it doesn't need installing and is just a folder with all game files in then pick the 'copy folder into wrapper' option. Then choose where to put it (c:/program files is the usual location)
It's worth reading up on the wineskin winery page to understand the other options avalable via tis config app, but I seem to remember that there weren't any changes which were essential to run oblivion.
Your app should be ready. navigate to the wrapper icon in finder (the one you clicked on to 'show package contents') and double click. Your game should open.
You can make a wrapper for a growing number of windows only apps (make one for each program), but google first to see if any special settings are needed.
