Happy to report this works on a mid-2010 iMac running macOS High Sierra 10.13.6. However...
This is still a problem for me as well. I guess I have more motivation to make the switch to Linux or PC, but Valve really bungled this rollout.
this worked for me as well. 10.13.6 mac here. suspecting this is only a temporary workaround, as blackscreen on mac has been a longtime problem.
I tried running this, and now realized that it doesn't support properties in games. The black screen/UI still appears in some places (most specifically when I was trying to add the launch options to the TSP demo).
You basically just have to blindly search around until the cursor acts like it detected somewhere it can type, click it, then type whatever launch options you need/want.

Steam definitely should've tested this BIG update on all systems before it was launched. =__=
the terminal fix is pretty janky, you can play games, but many features are still locked by blackscreen
It’s just a “work around” for playing until there’s hopefully gonna be a fix…
I just picked up a USB-C to HDMI adaptor for that sole purpose the day before this update. At least I can play the emulators on my Mac on a giant screen now. HAHA!!!!
Please fix this, Valve.
You can temporarily use this command line string until they fix it (open Terminal in your Utilities folder, and enter the command):
