My favorite has to be the Modern Warfare 2 soundtrack becuase it was one of the first M rated games I ever played and happened to be composed by Hans Zimmer :)

Medal of Honor: Allied Assault had some good tunes. Maybe a few other installments of the series as well. The Unreal Tournament theme is wicked. Deus Ex isn't your conventional FPS but has good music too.

The MoH series as whole has some great songs. They really captured the feeling and mood of being in World War II.
