No idea which new you should play, pretty much the type of RPGs that I like is in extinction.
Other noteworthy candidates are Neverwinter Nights (first one, with the expansions), Morrowind, Gothic 1, Baldur's Gate and Borderlands 2. :p (I really don't know if BL2 qualifies, but it has some of the best characters and the most inappropriate humor.
There are so many RPGs that I enjoyed, though, all for their own reasons. Stuff like Ultima Underworld, Ultima 8: Pagan, the Wizardry series, Bard's Tale, Diablo 2, Divine Divinity, the old DSA games like Sternenschweif (Drakensang would be a more modern version of it, though different story), Icewind Dale, and I'm sure the Witcher 1 and 2 are great based on the books I read. On handhelds, I like the early Final Fantasies, four through six especially (just bought FF5 for iOS), DragonQuest, some of the Tales games, the PSP Wild Arms was superb, and so on.
But yes, the RPG that rules them all is Planescape: Torment. :)
