That's just how language works. It evolves over time to be more condensed. "Y'all" is no different from "don't", "isn't", and "I've". They're all shortened but still applicable in daily language. The only difference is that "y'all" doesn't sound as civilized as the rest, so it has a bad reputation.
probably a local thing but you can know someone's am*rican if they use that

Texas is the Texas People's Republic, should soon become part of Russia as the LPR and DPR

I'm not sure, but probably has to do with simplifying the phrases to save some time or space during writing, because the point will remain the same and won't become any more difficult to be grasped and understood by the locals.
That's why those slangs are usually only known to the locals and not to the people on the other side of the world.

With that, naturally, comes the doubt of whether the person even knows how to write or speak properly, as the formal and taken version as is stated in the vocabulary is absolute and correct everywhere, while remaining unknown and possibly incorrect to those who're not used to it.

So, the answer is because they're used to it.

I do sometimes feel like pickin' up a slang or two, then apply them in practice.
For example, just now I used pickin' instead of picking. Small difference, but a difference regardless.
The same sometimes goes for my ya'r instead of the commonly known and possibly expected you are / you're. I just feel like using words in that way from time to time, and people still know what I mean with that.

Dialect is an informal use of words. Informal writing is when you're writing like this. Formal writing is when you are writing like this.

Formal writing is very strict so it's mostly just used in official/government/law/etc writing while using informal writing can be anything and everything ya'll like it to be! :D

Language is to be understood, not to be correct! ;)

go there and say it......:CrowdControl:
That’s how languages become something else. Imagine Latin but people keep inventing their own words and slangs that it becomes a different language over a course of thousands of years.
