mindustry is a whole nother level above factorio that i believe takes more to learn b/c you're on a timer / wave based progression and you'll need to learn how to properly defend AND REPAIR or recover from attacks.
complicated as MOBA games plus require good aim.

Aside from that, more recently the "game" of following cfs111's 700-mod guide for Skyrim and getting them all to work flawlessly, all while he rewrote the guide and discussed it with me.
That was pretty complex, and took about three weeks. Incredibly fun project, though. Probably played the completed project for two hours, then my entire system SSD died. Someday I'll try to do it again, and maybe even get to play it.
i'd also say table top war games like warhammer fantasy. aside from painting the army, there are a ton of rules and lots of measuring. fun but... complex and tedious too.
