Scuse my ignorance here, America has vast farms so how is it that processed food in the USA is so much in use?
Are the vegetables and fruit overpriced / significantly more expensive than the processed stuff?
Americans love convenience and low prices.
The stuff in grocery stores has been treated with extra treatments, if you want good prices you go to farmers markets, but those are not convenient to do visit.
As said in other parts of this all over the place thread, people don't have time to cook, busy work/family life no real time to spend 2-3 hours a day every day shopping for food, preparing it, cooking it and cleaning it etc. If you were a "fresh food" type.
So the use of short cuts to have parts of food prep already done for you is extensively used, sometimes that means buying a frozen pizza, other times that means buying pre-made pasta that you just chuck in the boiling water/veg etc. quick prep meal, stuff like hamburger helper. what ever you are into, there are powders, gels, pastes of everything you could imagine.
It goes way beyond ground spices and herbs. Its almost factory line food production, just in packaged form for you to assemble in the kitchen when desired. Cuts shopping and food prep time down by a couple of hours.
To find the cause of a problem of a system which has been operating for some time, the most likely candidate is the least conscious subsystem.
