You like accidentally clicking anywhere while watching a video and losing your spot because it was a link?
Website links didn't have that issue and it's faster to single-click through them.
Then comes along touch-screen devices, in which you use your finger to scroll around the webpage, but also single tap to open URL links. So depending on where you lift up your finger and drop it back down to scroll, you might mistakenly click and open a website link instead.
At the moment, you would need to code in Javascript on the websites as the web developer to change web links into double-clicks.
I would agree there should be a simple option on the web-browser(s) for those that want double-click, instead of a sing-click. I wouldn't use it myself, but I can see reasons for others wanting that feature and it wouldn't be hard to do.
I suggest seeing if your web-browser has "Help & Feedback", then provide feedback for a new option. Explain it clearly and you might just get it in future updates.
