Do you spell things the British way or the American way?

I got a little curious. What I mean by the title is, do you spell words like this: apologise, centre, defence (British) or like this: apologize, center, defense (American) I'm not British, but I think the way they spell words is better in my opinion. So, how do you spell words?

American, because that's where I was raised so that's how I was taught. Apologize, color, all that jazz is done the american way.

Except defense. I spell that one either way, mostly because I forget whether it's a "s" or a "c" but for the sake of this topic and not looking like any more of an idiot I'm going to pretend it's on purpose for the sake of inclusivity.

We've been taught UK English in my school years, but I can't actually tell you the answer.
Y'see, I've picked up the words throughout the years, and that's it.
If I don't know the word, I do Google it. Hopefully I remember it for the next time, and this process has been repeating itself from day to day, eventually managing to form somewhat of a vocabulary.

Is it English? Yes.
Is it UK English or US English? Ehh.. I do no longer have a clue.

I believe, I do provide replies of both variations of English languages, but I can't tell which is which nor if I know the word translated to the other English aswell in many cases.
I might know that there're apologise X apologize, fries X chips, and so on.. But that's about it.

If you asked Americans if they'd know what a certain British word meant, chances are many of them would say no. Approach an American and ask where the "lift" is and he'll probably be confused. Mixing and matching of words is a clear sign somebody is an European lol

I'm a non native english speaker who learned british english in school and american english from mass media, it's a mix of both with a lean towards british

I use "grey"/"gray" interchangeably and always pronounce "caramel" properly with all three syllables. Other than that, I speak standard Garrison Keillor-esque Upper-Midwestern, with the heavy, rapid diphthongs and rhotics.
