I mean, Chun Li looks older in Street Fighter VI than she did in prior games (at least in my opinion), but I'm not seeing too many complaints about that, perhaps in large part because it's supposed to be closer to the end of the Street Fighter timeline anyway and everybody's kind of aged up to match.

I'm not sure what portion you mean. I'm not hip with the terminology and I meant to be writing about two separate characters. I'm not sure what's up with Mary Jane, so the only explanation I have for now is what the others are suggesting.
If you meant to ask about Chun Li, since I didn't make my intentions clear originally, she was always meant to be an adult so I see no need to censor it. She's about 23 in Street Fighter: II The World Warrior based on the set birth date and release date of the game. (1968[tcrf.net]-1991=23) and I don't think any of the alpha games take place long enough before that to change her status as an adult. Even if we assume that Street Fighter Alpha takes place in 1988, which is the earliest it could be set (since Street Fighter presumably takes place in 1987 when it was released, and Alpha happens afterwards) that's only five years prior so she would be 18 at that time.
It doesn't really make sense to censor her age, since Alpha is the earliest point in the timeline in which we see her, unless Alpha takes place before march 1st (which is Chun Li's birthday). However, that's unlikely since 75% of the year takes place after March, the weather seems fair (rather than snowy), the month of the game's release is june (if that is of any importance), and if it takes place exactly 1 year after Street Fighter (which is about the amount of time it makes sense to host another tournament) it'd likely be in august (which is the month in which the original Street Fighter was released).
Regardless, assuming that Chun Li's birth date hasn't been retconned, and Street Fighter 6 takes place in 2023, then she should be about 55, so she should look 32 years older and Capcom is just doing what makes the most sense for the timeline in that regard, esp. since other characters look older too (Dhalism has a big white Santa beard now). One might argue it's a little weird since Chun Li's aging never seemed particularly apparent before, but then again 32 years is a much larger time-skip than any of the prior installments. If anything, one might argue that Chun Li's most recent design looks too young to be 55, but then again, it's not quite a given that VI takes place in 2023 either (just an assumption).

Perhaps more and more uglier women are in power in these companies these days and as such want to see themselves represented more. Perhaps they are afraid of competition from fictional characters.
Either way, it is a definite trend.
I've never actually met anyone upset because characters in video games don't look exactly like they do... Does anybody even care about this? Black people play white characters, white people play black ones, nobody outside of political activists who eat, sleep, and breathe toxic political activism seem to care.
Even characters where you can make someone look like anything you want I've never actually seen them create a character that looks like themselves. Heck, half the guys out there choose female characters because they don't want to look at a dude's ass and listen to him grunt for 20 hours.
