Actually Gwyn is pretty lame since you can parry him.
Best boss fight in Dark Souls is Arthorias the Abysswalker.

Barbatos Goetia from Tales of Destiny (remake) was one of my favourite boss fights. You get punished and take massive damage just for using an item.
