Sniper Elite and STALKER are good ones with "bullets that come out of the rifle".

It's called Hitscan vs Projectile bullets.

Call of Juarez, ARMA, and STALKER are a few I can think of.

I think Arma and Planetside 2 have guns that shoot bullets that take time to reach their target and drop over time and stuf...if that's what you're looking for, anyways.

One that is physically modeled and in the game.

Doesn't Fallout 3 & New Vegas have the bullet system. At least you can see the bullet in VATS slow motion mode as it hits the target. Ah the satisfaction when you see it hit the skull of the enemy.
